CREAMY POTATO BAKE 
5 lbs. potatoes
1 (8 oz.) cream cheese, whipped
4 lg. scallions (cut up into tiny pieces)
2 eggs
Parsley

Make regular mashed potatoes as usual (a little on the soft side). Add all ingredients in pot and stir well. Place into a well greased pan, dot with butter and paprika. Bake in 400 degree oven for 30 minutes uncovered.
