CREAMY SCALLOPED POTATOES 
6 med. potatoes
3 tbsp. butter
3 tbsp. flour
1/4 c. onion, chopped
Salt and pepper to taste
2 1/2 c. milk
Parsley

Heat oven to 350 degrees.

Peel potatoes, wash, cut into thin slices. Melt 3 tablespoons butter in saucepan over low heat. Blend in flour, salt and pepper until bubbly. Stir in milk, heat to boiling, stirring constantly for about 1 minute. Remove from heat.

In greased 2 quart casserole, layer sauce, potatoes, onions, parsley, then repeat.

Top with sauce. Cover and bake 60 minutes, uncover and bake 30 minutes. Let stand 5 to 10 minutes before serving. May sprinkle Parmesan cheese between layers.
