NO CRUST PUMPKIN PIE 
3/4 c. sugar
1/2 c. buttermilk baking mix
2 tbsp. melted butter
1 (13 oz.) can evaporated milk
1 3/4 c. prepared pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla
2 eggs, slightly beaten

Put all ingredients in large bowl. Beat until smooth. Pour into greased 9-inch pie pan and bake in 350 degree oven 55-60 minutes. Serves 8.
