1 to 1 1/2 lb. crabmeat (imitation) chopped fine 1 c. cornflakes, chopped fine 1 sm. onion, chopped fine 1 piece celery, chopped fine 1 c. medium white sauce (cooled) 2 eggs 1 tbsp. milk Bread crumbs Oil Prepare crabmeat, cornflakes, onion, celery and white sauce and mix together. Beat 2 eggs and add milk. Pour bread crumbs into another bowl. Put oil into large fry pan just to cover bottom, about 1/4 to 1/2 inch deep with #12 scoop or ice cream scooper from home. Make crab mixture into ball. Flatten with hands and put in egg wash on both sides. Then put into bread crumbs. After all crab is made into cakes put in hot oil just until golden brown on each side. Serve with cocktail sauce, coleslaw and French fries. |
