MAKE-AHEAD BARBECUE 
4 - 5 lb. Boston butt or fresh ham
1 lg. onion, chopped
3 tbsp. brown sugar
3 tbsp. dry mustard
1/4 tsp. red pepper
1/4 tsp. black pepper
1 c. vinegar
1 1/2 c. water
1/2 c. catsup
1/2 c. Worcestershire sauce
1 tbsp. salt

Put meat in roaster. Mix onion, sugar, mustard, peppers, vinegar, water, ketchup, Worcestershire sauce and salt. Pour mixture over meat. Cover roaster and cook in a 325 degree oven for 5 to 6 hours, or until meat is very tender and virtually falls from the bones.

When the meat is done, allow it and the drippings to become cold. Remove all the fat and skin from the pork. Skim fat from sauce.

Chop up all the meat and reheat in the sauce. If the meat is to be frozen, pack into containers with some of the barbecue sauce. Reheat when ready to use.
