MAKE-AHEAD COLESLAW | |
1 1/2 lb. cabbage 2 carrots, scrubbed and grated 1 green bell pepper, seeded and chopped 1 sm. onion, chopped 1/2 pkg. unflavored gelatin (about 1 tbsp.) 1/4 c. cold water 1/2 c. white vinegar 1/3 c. sugar 1/2 c. vegetable oil 1/2 tsp. celery seed 1 tsp. salt 1 tsp. black pepper 1/4 tsp. red pepper flakes Shred cabbage and combine with carrots, green pepper and onion. Soften gelatin in water for 5 minutes. In small saucepan, combine vinegar and sugar and bring to a boil, boil until sugar is dissolved about 2 minutes. Remove from heat and add oil, celery seed, salt, pepper and red pepper flakes. Beat or blend until well mixed, and pour over vegetables. Toss until well coated. Place in covered container in refrigerator overnight. The next day, toss again dressing will have thickened. Makes about 2 quarts or about 10 servings. |
