MINI CHEESE CAKE 
2 (8 oz.) soften cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
21 oz. can cherry pie filling or other flavor as topping
1 box vanilla wafers
1 container paper cup cake holders

Beat cheese, sugar, eggs, lemon juice and vanilla until fluffy. Line cup cake pan with paper cups. Place 1 wafer in bottom of cup fill 2/3 full. Bake at 375 degree s for 15-20 minutes. Cool and top with pie filling.
