MINI CHEESE CAKES 
8 oz. pkg. of cream cheese
6 tbsp. sugar
1 egg
1/2 tsp. vanilla

Cream above ingredients and spread 1/2 inch thick on a vanilla wafer placed in a small muffin paper.

Place filled muffin papers in a muffin pan and bake at 350 degrees for 15 minutes.

Cool completely.

When completely cooled, top each mini cheese cake with a dab of prepared whipped topping. Finish off with a teaspoon of cherry pie filling or strawberry pie filling. Makes about 20.
