RHUBARB BREAD PUDDING 
4 c. diced rhubarb
3 1/2 c. cubed bread
1 1/3 c. sugar
1/2 tsp. ground nutmeg
1/2 tsp. cinnamon
1/4 c. nuts (opt.)
1/4 c. melted butter

Toss together in 2 quart greased casserole. Cover, bake at 375 degrees for 45 minutes. Serve warm or cold with cream, whipped cream or ice cream. 6 servings.
