RHUBARB PUDDING 
2 c. sugar
1/2 c. butter
1 egg
1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
3 c. rhubarb
2 c. boiling water

Cream 1 cup sugar and 1/2 cup butter. Add egg, flour, salt, baking powder and 1 cup boiling water. Mix well and put in 7 1/2 x 12-inch flat baking dish. Top with rhubarb (cut in 1/2-inch pieces) and 1 cup sugar. Dot with butter and put 1 cup boiling water over rhubarb. Bake at 350 degrees for about 40 minutes.
