RHUBARB PUDDING (Microwave) 
4 c. sliced rhubarb
6 slices bread, cubed
1 1/2 c. sugar
1/2 tsp. cinnamon
1/4 c. butter

Combine rhubarb, bread, sugar and cinnamon in large bowl and mix well. Put into 1 1/2 quart casserole. Microwave butter in dish 1/2 - 1 minute until melted. Drizzle over rhubarb. Sprinkle with a little more cinnamon. Microwave uncovered 10 or 11 minutes on high until tender. Serve with half and half. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
