CARAMEL FILLED CHOCOLATE COOKIES | |
1 c. brown sugar 2 1/4 c. flour 3/4 c. unsweetened cocoa 1 tsp. baking soda 1 c. sugar 1 c. butter 2 tsp. vanilla 2 eggs 1 c. chopped pecans 48 Rolo's Beat sugars and butter. Add vanilla and eggs; beat. Add flour mixture (flour, cocoa and soda). Stir 1/2 cup pecans. For each: Flour your hands, shape about 1 teaspoon dough around 1 Rolo. In a small bowl combine remaining 1/2 cup pecans and 1 teaspoon sugar. Press 1 side of each ball into mixture. Place nut side up on greased cookie sheet. Bake 375 degrees 7-10 minutes or until slightly cracked. Makes 4 dozen. |
