VEGETABLE MEAT LOAF 
1 1/2 lbs. ground beef
1 egg, lightly beaten
1/2 c. chopped onion
1/4 c. finely chopped celery
1/2 tsp. basil, crushed
1 tsp. Worcestershire sauce
1 c. fresh bread crumbs soak in 1/2 c. milk
1/2 c. shredded carrot
1 tbsp. parsley flakes
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 350 degrees.

In a large bowl combine all ingredients. Pack into a 9 x 5 inch loaf pan. Bake 1 hour and 15 minutes. Drain the excess drippings. Yields 8 servings.
