ENCHILADA CASSEROLE 
1 lb. hamburger meat
1 can Ro - Tel tomatoes and chilies
1 onion, chopped
1 sm. can Trappey's jalapeno pinto beans
1 can mushroom soup
1 pkg. tortillas, frozen
1 med. pkg. Velveeta cheese
1 sm. can chili

Brown meat. Add onions and chili, beans, soup, tomatoes. Simmer 10 minutes. Layer casserole starting with tortillas, meat mixture then 1/2 cup of cheese. Repeat layers. Bake at 350 degrees for 30 to 40 minutes.
