SKILLET SPANISH RICE 
1/4 c. cooking oil
1 med. onion, sliced
1/4 c. green pepper
1/4 c. yellow pepper
1/4 c. red pepper
1 c. uncooked rice
1 lb. ground meat
1 (15 oz.) can tomato sauce
1 (4 oz.) can mushrooms
1 3/4 c. hot water
1 tsp. prepared mustard (optional)
1 tsp. salt
Dash of pepper

Heat oil in skillet; brown meat; drain off excess grease, add onion, peppers, rice to beef. Stir over high heat until lightly browned. Add tomato sauce, mushrooms, and remaining ingredients. Mix well, bring to a quick boil. Cover tightly and simmer 25 minutes. 1/2 grated cheese may be added just before serving.
