TACO RICE IN SKILLET 
1 lb. ground beef
1 med. onion, chopped
1 can (16 oz.) whole tomatoes
1 c. Minute Rice
1 pkg. taco mix
1 c. cheddar cheese
2 c. shredded lettuce

Brown beef with onion in 10 inch skillet; drain off drippings. Drain juice from tomatoes reserving liquid; add water to juice to make 2 1/2 cups liquid, cut up tomatoes, add to beef. Also add liquid rice and taco mix. Stir, bring to boil. Reduce heat, cover and simmer until liquid is absorbed, about 25 to 30 minutes. Top with cheese and lettuce. Serve.
