ENCHILADA PIE 
2 lbs. ground beef
1 or 2 med. onions
3/4 - 1 lb. Longhorn cheese
1 can enchilada sauce
1 can tomato sauce (15 oz.)
1 can black olives if desired

Cook onions until tender; add ground beef and cook until done. Add sauces, simmer for 5 or 10 minutes. Line 9x13 inch pan with soda crackers. Put layer of meat mixture on crackers. Put layer of sliced cheese on top of meat. Pour remaining meat mixture on top of cheese and bake in 325 degree oven 30-40 minutes. Put olives on top if desired.
