STUFFED POMPANO 
Pompano (or snapper)
Sm. shrimp
Salt and pepper
Stuffing
Bacon strips

STUFFING:

2 lbs. cooked shrimp
1 lb. crabmeat
1 c. Italian bread crumbs
1/2 c. sherry (optional)
1/2 bunch parsley
2 eggs
Salt and pepper

Have butcher prepare fish with head off and a pocket - salt and pepper, then stuff. At top of pocket, put whole shrimp and bacon slices. Place in covered dish. Bake 30 minutes at 300 degrees.

Stuffing: Mix all ingredients. Put parsley and onion in food processor. Cook slowly. This will stuff 12 small fish or one large fish.
