DOLLARS WORTH OF HAM
 
1 lb. dried black-eyed peas
2 1/2 - 3 qt. water
1 tsp. salt
2 lbs. ham
1 small onion

Boil the water in a large pot. Add salt and peas that have been picked and washed. Reduce heat. Dice ham in 1" to 2" cubes and add to peas along with whole onion. Cook over low heat until peas and ham are done. 5 servings.
