BROCCOLI SPOONBREAD | |
1 (10 oz.) pkg. frozen, chopped broccoli 2 slightly beaten eggs 1 c. sour cream 1/2 c. butter, melted 1/4 tsp. salt 1 (8 oz.) pkg. corn muffin mix 1 c. grated Cheddar cheese Butter an 8 x 8 inch pan. Preheat oven to 350 degrees. Cook broccoli until tender; drain well. Combine eggs, sour cream, butter, salt, and corn muffin mix. Stir broccoli into mix and spoon into prepared pan. Sprinkle with cheese. Bake at 350 degrees for 30-45 minutes. |
