LOU'S BROCCOLI CORN BREAD 
10 oz. pkg. frozen broccoli
6 oz. cottage cheese
8 1/2 oz. box Jiffy corn muffin mix
1 stick butter
2 eggs, slightly beaten
1 sm. onion, chopped
Salt and pepper

In shallow Corningware dish or skillet, melt butter. Saute onion in butter. Thaw broccoli in microwave just enough to crumble with hands, into mixing bowl. Add cottage cheese and muffin mix. Mix lightly. Stir in salt and pepper, butter and onions. Pour batter back into Corningware dish and bake for 45 minutes at 400 degrees. You may use muffin pan or cast iron cornstick skillet. Time and temperature will vary.

Since microwave ovens vary in power, you may need to adjust your cooking time.
