BROCCOLI BREAD | |
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained but not cooked 1 lg. onion, chopped 6 oz. cottage cheese 1/2 c. melted butter 4 beaten eggs 1 tsp. salt 1 (8 1/2 oz.) box corn muffin mix Mix chopped broccoli, onion, cottage cheese, butter and salt. Add corn muffin mix and blend thoroughly. Pour into a greased 9x13 inch casserole dish (or a 9x12 inch pan). Bake at 400 degrees for 20 to 25 minutes or until mixture tests done (do not overbake). Cut into squares and serve hot. Yield: Makes 12 to 15 servings. |
