2 c. (1 qt.) strawberries
4 c. sugar
1 c. water
1 (1 3/4 oz.) pkg. powdered fruit pectin
Crush strawberries or process in blender until in small pieces. Measure into large bowl. Stir in sugar; let stand 10 minutes. In small saucepan, combine water and pectin. Heat to boiling and boil 1 minute, stirring constantly. Stir into fruit mixture and continue stirring 3 minutes to dissolve most of sugar. Ladle into freezer glasses or containers, leaving 1/2 inch at top. Cover with lids. Let stand until set, about 24 hours. Store in freezer up to 1 year or in refrigerator 2 to 3 weeks. Makes 5 (1 cup) glasses.
