KEY LIME PIE 
1 (8 or 9 inch) pie crust - may be graham cracker
4 egg yolks
1 can (14 oz.) sweetened condensed milk
1/2 c. fresh lime juice
1 tbsp. grated lime zest
1 c. heavy cream
3 tbsp. powdered sugar

Preheat oven to 350 degrees. Beat egg yolk in a large bowl. Add lime juice and zest. Add more lime juice to taste. Pour into cool pie crust. Bake for about 15 minutes. Cool to room temperature.

Whip cream and add sugar until lit holds its shape. Spoon or pipe over pie. Sprinkle with zest or garnish with lime peel. Serve at room temperature.
