KEY LIME PIE 
CRUST:

1 (8 1/2 oz.) box chocolate wafers
1/2 c. unsalted butter, melted

Crush wafers until finely ground. Mix crumbs with melted butter. Press firmly to bottom and sides of a 10-inch pie plate. Bake at 350 degrees for 10 minutes. Set aside to cool.

FILLING:

1 (14 oz.) can sweetened condensed milk
1/3 c. fresh lime juice
3 eggs, separated
1 tbsp. lime rind, grated
3 to 4 drops green food coloring
1/4 tsp. salt
1 c. heavy cream, whipped
2 tbsp. sugar
1 tbsp. dark rum
Shaved Chocolate (for garnish, if desired)

In medium bowl, mix milk with lime juice and 1 1/2 teaspoons of lime rind. Beat egg yolks and add to milk mixture. Add food coloring; mix thoroughly. In separate bowl, beat egg whites and salt until stiff. Fold milk mixtures gently into egg whites until thoroughly combined.

Pour mixture into pie shell and bake at 250 degrees for 10 minutes. Remove from oven and cool at least 30 minutes. Chill in refrigerator. Before serving, combine whipped cream with sugar and rum, and spread over top of pie. Sprinkle with remaining lime rind; add shave chocolate.
