PUMPKIN CAKE 
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
4 eggs, beaten
2 c. sugar
1 c. Wesson oil
2 c. pumpkin

Combine flour, soda, salt and cinnamon in small bowl. Mix eggs and sugar, beat well, add Wesson oil, beat again. Beat in flour mixture. Add pumpkin, beat. Bake at 350 degrees for 1 hour (I use 10 inch tube cake pan).

ICING:

1 stick butter
1 (3 oz.) pkg. cream cheese
1 box confectioners' sugar
2 tsp. vanilla

Have butter and cream cheese at room temperature. Cream the two together well, add confectioners' sugar and mix well. Add vanilla. If desired, garnish with chopped pecans.
