IRISH SODA BREAD 
2 1/2 c. flour (unsifted)
1/2 tsp. baking soda
1 pkg. dry yeast
1/4 c. very warm water
3 tbsp. sugar
1/2 tsp. salt
1 tbsp. caraway seeds
2 tbsp. butter
3/4 c. buttermilk
1/2 c. raisins

Dissolve yeast in warm water, set aside for 5 minutes.

Stir together 1 cup flour, sugar, salt, caraway seeds and baking soda in large mixing bowl. Add dissolved yeast and mix well.

Melt butter; then beat in buttermilk. Add to yeast mixture and beat well. Add remaining 1 1/2 c. flour to make a soft dough until it leaves side of bowl. Stir in raisins.

Cover and let rise until double (about 1 hour). Turn onto lightly floured cloth. Knead for 2 minutes.

Form into a round ball. Place on greased baking sheet. Let rise until fully doubled. Preheat oven to 350°F.

Bake for 30 minutes in hot oven.
