HELEN'S KEY LIME PIE 
3 egg yolks
1 can condensed milk
4 key limes (about 1/2 c. juice)

Blend and cut into butter crust (recipe below). Top with whipped cream, slightly sweetened.

BUTTER CRUST:

1 c. flour (with a pinch of baking powder)
1 stick butter
2 tbsp. sugar

Mix thoroughly by hand until it cleans the bowl. Put into a greased pie plate. It can be used baked or not (I like to freeze it before baking - be sure to prick it before freezing.
