SPINACH SALAD AND BACON DRESSING 
6-8 slices of bacon
1/4 c. wine vinegar
3 eggs (2 hard-boiled)
1/8 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic
Fresh spinach
Fresh mushrooms

DRESSING: Cook bacon, reserving 1/4 cup of drippings. Combine in blender: bacon drippings, vinegar, 1 egg, salt, pepper, garlic and 1 slice of bacon. Blend 2-3 minutes. Refrigerate approximately 2 hours until thickened.

SALAD: Crumble bacon and hard-boiled eggs. Slice mushrooms. Add to spinach.
