FRIED ZUCCHINI BREAD 
2 sm. zucchini
1 c. cornmeal
1/4 c. buttermilk
1 egg

Wash and dice zucchini, cook until soft. Strain and leave 3/4 cup cooking liquid in pan.

Combine: cornmeal, egg, and buttermilk. Add zucchini and water mix well. Fry in hot oil until golden brown.
