FRIED ZUCCHINI 
2 lg. zucchini
2 eggs (beaten)
1 c. cornmeal
1/4 c. flour
Salt to taste

Wash zucchini and cut off ends. Slice zucchini, like a log, into circles. Dip slices into egg and then cornmeal mixture. Fry in a thin layer of hot oil. Turn to brown both sides. Drain on paper towels. Salt to taste.

Great recipe to start cuttin' down the summer stockpile of zucchini! I added chili powder, curry, and salt to the cornmeal/flour batter for a little extra spice. Will make again and again and again!
