BLINTZE SOUFFLE 
12 frozen blintzes (2 pkg.) any flavor (cheese of fruit)
butter
1/2 c. sour cream
5 eggs
2/3 c. sugar
1 tsp. vanilla
1 (3 oz.) pkg. cream cheese

If you have one, a glass pyrex casserole dish 11 3/4 x 7 1/2 x 1 3/4 inch is a perfect size.

Grease baking dish with butter; spread butter on top and bottom of blintzes; lay flat in pan. In blender mix sour cream, eggs, sugar, vanilla and cream cheese. Pour over blintzes.

Bake at 350 degrees for 30-40 minutes (golden brown and bubbly). It will firm up after a few minutes out of the oven.

May be prepared completely in advance even the night before. Just pop in the oven and bake. Easy and great for brunches. Serve hot with sour cream and/or fruit pie filling as toppings.
