EXOTIC TURKEY SALAD 
2 qts. bite sized pieces of cooked turkey or chicken
1 lg. can (20 oz.) water chestnuts, drained and sliced
2 c. finely diced celery
2 lbs. seedless green grapes
2 c. toasted slivered almonds (optional)
2 c. mayonnaise
1 tbsp. curry powder
2 tbsp. soy sauce
2 tbsp. lemon juice
1 lg. can (1 lb. 13 oz.) pineapple chunks

Combine turkey, water chestnuts, celery, grapes and 1 1/2 cups toasted almonds. Mix mayonnaise with curry powder, soy sauce and lemon juice. Combine with turkey mixture. Let chill several hours or overnight. Before serving, add pineapple. Spoon on lettuce, garnish with remaining almonds. Serves 12 to 15.
