PRUNE NUT BREAD | |
1 cup chopped dried prunes 2 tsp. shredded orange peel 1 c. orange juice 1 1/2 cups flour 3/4 cup sugar 3 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 2 eggs, beaten 2 tbsp. salad oil 1/2 cup chopped walnuts Combine prunes, orange peel, and juice. Let stand for 30 minutes. Sift together dry ingredients. Combine eggs, oil, and prune mixture; add to dry ingredients and mix well; add nuts. Turn into greased 9 x 5 x 3 inch loaf pan. Bake at 350°F for 1 hour. Remove and let cool. Serve. |
