SWEET AND SOUR PORK 
2 lbs. boneless pork loin or shoulder
2 tbsp. vegetable oil
3 tbsp. soy sauce
1 c. pineapple juice
1/2 tsp. ground ginger
1/3 c. brown sugar
2 tbsp. cornstarch
1/2 c. water
1/3 c. vinegar
4 carrots
1 can pineapple chunks
1/2 to 1 lb. pea pods (optional)

Cube pork and cook in hot oil until brown; add soy sauce, pineapple juice and ginger - cook 1 minute. Remove meat and add to sauce, brown sugar and cornstarch mixed in the water and vinegar, simmer until thickened. Add pork and simmer 30 minutes. Peel and slice carrots, add to meat and sauce. Add drained pineapple chunks. Simmer about 5 minutes. May add pea pods. Serve over cooked rice.
