SPANISH RICE AND HAM 
1/2 green pepper, chopped
1/2 med. onion, chopped
3 cloves garlic, chopped
8 green olives, chopped
1 tbsp. salt
1 tbsp. black pepper
2 tsp. paprika (for color)
3 tbsp. oil
2 c. white rice
1/2 lb. ham (cubed)
3 c. hot water

Place oil in pan and simmer with onion, green peppers, garlic, salt, black pepper, and olives for about 3 minutes. Add rice and paprika. Simmer for 2 minutes. Add the hot water. Boil until water is almost evaporated. Turn heat real low. Cover and let cook until rice is done.
