POTATO CHIP COOKIES 
1 c. butter, softened
1/2 c. sugar
1 3/4 c. all-purpose flour
3/4 c. potato chips, coarsely crushed
3/4 c. pecans, chopped
1 tsp. vanilla extract
2/3 c. powdered sugar, sifted

Cream butter and sugar, beating until light and fluffy. Add flour, potato chips, nuts and vanilla; beat well. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until edges are lightly browned. Cool 5 minutes on cookie sheets; remove to wire racks. When cookies are cool, roll in powdered sugar. Yield: 4 dozen.
