JIM'S TURKEY ALA KING 
2 c. thinly sliced celery
1/2 c. chopped green pepper
1 can chopped mushrooms, drained
3/4 c. butter
1 c. milk
1 1/4 c. all-purpose flour
2 tsp. salt
1/4 tsp. pepper
1/4 lb. cheddar cheese, diced
1 can pimentos, chopped
1 (10 oz.) pkg. frozen mixed vegetables
2 c. turkey, cut up

Cook first 3 ingredients in the butter for 5 minutes. Blend in flour and seasonings. Gradually add milk and cook, stirring until thickened. If gravy is too thick for your liking, add more milk; if gravy is too thin, add more flour. Cook for at least 10 minutes after adding flour to avoid an "uncooked" taste.

Add remaining ingredients and heat well; taste and adjust seasonings, adding salt and pepper or any other favorite seasonings, (Bell Seasoning, sage, garlic powder, onion powder, etc).
