POTATO CHIP COOKIES 
3/4 c. softened butter
3/4 c. sugar
1 egg yolk
1 tsp. vanilla
1 1/4 c. all purpose flour
3/4 c. finely crushed potato chips
3/4 c. finely crushed pecans
3 tbsp. sugar

Cream butter, sugar, egg yolk and vanilla until fluffy. Add flour, potato chips and nuts. Mix well. Form into 1 1/2 inch balls and place 3 inches apart on ungreased cookie sheet. Dip bottom of glass in sugar and flatten cookie. Bake at 375 degrees for 8 to 10 minutes. Makes 2 1/2 dozen.
