“CUCUMBER SALAD” IS IN:
NEXT RECIPE:  DEVILED EGGS

CUCUMBER SALAD 
3 medium cucumbers, thinly sliced
1 medium sweet onion, sliced thin and separated into rings
1 cup white vinegar
1/4 cup vegetable oil
1 cup water
1/4 cup sugar, or more to taste

The cucumbers may be scored or part of the skin can be peeled for better absorption of the juice.

Layer cucumbers with the onion in a large bowl. In a separate bowl, mix remaining ingredients, stirring until sugar has dissolved.

Taste and adjust sugar for sweetness, adding more sugar, if needed. Pour over vegetables and toss lightly.

Cover and chill for 2 to 4 hours before serving.

Glad to find this recipe, it conforms to my mothers but she added milk. I make it a point to use a pickle type of cucumber and more onions than called for because they seem to go first.

This is an "old" country side dish. Every generation that I can remember used this, with exception of the oil. This was never added. The sugar was adjusted to taste.

Great recipe, and easy. I skipped the sugar, however...just not having a sweet tooth. Also, I added shredded carrots. Next time, I might use the recipe as a salad dressing on lettuce and other veggies.

Very good!! However, the EASIEST way to make just mix sliced cucumbers and onion with seasoned rice vinegar and a little pepper...can add dill also if you like!

This is the old standard made by my grandmother, although we prefer ours to be a bit more sweet. I have added bell pepper slices (of all colors)for added flavor, texture, and color.

It's better to slice the cucumbers and put salt and pepper on them and place it in a covered dish over night. The next day squeeze all the excess water out of the cucumbers and then mix in the ingredients. I never add sugar, if needed for more fluid, I add a little splash of milk.
