SQUASH SAUSAGE SOUFFLE | |
2 c. mashed squash, cooked 2 tbsp. butter, melted 3 eggs, separated 1 tbsp. onion, minced 2 tsp. lemon juice 4 tbsp. flour 1/2 lb. ground sausage, cooked 1/4 tsp. salt 1/8 tsp. pepper 1/2 tsp. thyme In a mixing bowl combine butter, egg yolks, onion, juice and flour. Stir in remaining ingredients and squash. In a bowl beat egg whites to stiff-peak stage (but not dry). Pour into a butter coated 2-quart casserole dish. Bake in preheated 375 degree oven 50 to 60 minutes. |
