BRUNCH SAUSAGE SOUFFLE 
1 lb. sausage
1/4 tsp. nutmeg
6 eggs
5 slices white bread, cubed
1 tbsp. diced pimento
1 1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
4 oz. Swiss cheese, shredded

Brown sausage in large skillet; pour off drippings if too much grease. Sprinkle salt, nutmeg and pepper over sausage; let cool.

Beat eggs well, beat in milk and fold in bread cubes, cheese and pimento. Stir in cooled sausage. Place mixture in well-greased 8x8 inch casserole; cover and refrigerate overnight. Bake in slow 325 degree oven for 1 hour and 10 minutes. Let stand 5 minutes before cutting into serving size pieces.
