SAUSAGE SOUFFLE 
1 1/2 lb. pork sausage
1 1/2 tsp. salt (optional)
1/4 tsp. rubbed sage
1/8 tsp. pepper
6 eggs
1 1/2 c. milk
4 c. bread cubes
4 oz. shredded cheddar cheese
1 tbsp. diced pimento
Bacon-Wrapped Cherries (recipe follows)

Brown sausage in large frying pan; pour off drippings. Sprinkle salt, sage and pepper over sausage and let cool. Beat eggs well. Beat in milk and fold in bread cubes, cheese and pimento. Stir in cooled sausage.

Place mixture in well-greased 8x8 casserole. Cover and refrigerate at least 1 hour. Bake in a 325 degree oven for 1 hour 10 minutes. Let stand 5 minutes before cutting into serving-size pieces. Garnish with Bacon-Wrapped Cherries.

BACON-WRAPPED CHERRIES:

6 slices bacon
6 maraschino cherries

Pan fry bacon until almost done. Immediately wrap each bacon slice around a cherry, securing with small wooden pick. Place in a pan and bake 2-4 minutes.
