Marshmallows 4 c. sweet potatoes or yams, boiled 1/4 c. melted butter 1/4 c. cream 2 tbsp. dark brown sugar 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/2 tsp. salt 2 tbsp. vanilla extract 1 can (sm.) pineapple tidbits (drain & reserve juice) 3 ripe bananas, sliced 1/3 c. maple syrup (or honey) 1/3 c. orange juice 1/3 c. pineapple juice (from tidbits) 1 tsp. rum extract Mash yams (or potatoes) well. Beat in melted butter, cream, bananas, sugar, cinnamon, nutmeg, salt and vanilla extract. Arrange layer of yams in bottom of well buttered 1 1/2 quart baking dish. Top with layers of bananas, pineapples and marshmallows. Combine maple syrup (or honey), orange juice, pineapple syrup (juice) and rum extract. Drizzle rum flavored syrup over each layer, ending in marshmallows. Bake uncovered 25 minutes in preheated 350 degree oven. |
