JENI'S ASIAN CABBAGE SALAD
A refreshing, healthy, and delicious way to prepare cabbage. This salad could be a great addition to your next barbecue!

1 medium head green cabbage
1 small head red cabbage
1 cup grated carrots
1 cup yellow raisins
1 cup slivered almonds
2 (3 oz. ea.) pkgs. Ramen noodles, crushed in bag
1 tbsp. sesame oil
Newman's Own Sesame Ginger salad dressing
green onions, for garnish

Pour sesame oil into non-stick pan on medium heat. Add crushed noodles (don't forget to remove and discard spice pack) and toast until light brown. The noodles cook fast and can burn quickly so stir often. Set toasted noodles aside to cool.

Cut cabbage heads into quarters and remove core. Cut cabbage into 1/4 to 1/2-inch slices, removing any large core pieces.

Grate carrots and slice green onions.

Combine both cabbages, carrots, raisins, almonds, and Ramen noodles in a large bowl and mix gently. Pour in about 2/3 of a bottle of the Newman's salad dressing and toss. Taste and add more dressing to taste.

Transfer completed salad to decorative bowl and garnish with green onions. Enjoy!

Note: Mix up this recipe by replacing raisins with chunks of other dried fruits like apricots or Craisins. Swap almonds with peanuts or cashews. Or add some fresh or canned chopped pineapple for a sweet treat. I've tried other salad dressing, but like the ginger kick in the Newman's Sesame Ginger. Try other sweet and salty Asian dressings that you like.
