TURKEY STEAKS 
2 c. cooked turkey, minced
1/4 c. pimento, chopped
1 (4 oz.) mushrooms, chopped
2 tbsp. butter
1 tsp. onion, grated
1 1/2 c. bread crumbs
1 egg, slightly beaten
1/2 c. milk
1 tsp. salt
1/8 tsp. pepper
1/4 c. flour or bread crumbs
1/4 c. shortening for browning

Combine turkey, pimento, mushrooms, butter, onion and bread crumbs, egg, milk, salt and pepper. Form mixture into individual steaks and chill thoroughly. Dust with flour or bread crumbs and pan fry or brown on griddle at 375 degrees for about 3 minutes on each side. Garnish with parsley and sliced tomatoes. Makes 4 to 6 servings. Freezes well.
