SNICKERDOODLE COOKIES 
1 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Mix first 3 ingredients thoroughly. Sift together remaining ingredients and stir into first mixture. Chill dough 3 to 4 hours or overnight. Roll into balls the size of walnuts. Roll in mixture of 2 tablespoons sugar and 2 teaspoons cinnamon. Place 2" apart on ungreased cookie sheets. Bake until lightly browned, but still soft, at 350 degrees for 8 to 10 minutes. These cookies puff up at first and then flatten out. Makes about 5 dozen.
