PERFECT PIE CRUST 
4 c. self-rising flour
1 tbsp. sugar
2 tsp. salt
1 3/4 c. shortening
1 tbsp. vinegar (white or rice)
1 egg
1/2 c. water

Mix flour, sugar, and salt with a fork. Add shortening and mix until crumbly. In small bowl beat egg, water and vinegar. Add dry ingredients. Divide into 2 balls. Chill 30 minutes to an 1 hour.
