MEXICAN RICE 
1 c. rice
1/4 c. oil
1 onion, chopped
1 green pepper, chopped
1 pod garlic, crushed
1/4 c. canned tomatoes
1 tsp. salt
Black pepper
1 tbsp. chili powder
1 tbsp. ground cumin
2 c. water

Fry rice in hot oil until it is brown. Add the onion and pepper, and garlic. Cook a few minutes. Add the tomatoes and rest of the ingredients. Stir well and bring to boil. Simmer for 25 minutes.
