MEXICAN STYLE BEEF AND RICE ON
TORTILLA CHIPS
 
1 lb. lean ground beef
1 med. onion chopped
1 clove garlic
2 c. water
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
2 tbsp. brown sugar
1 tbsp. chili powder
1 tsp. oregano
1 tsp. cumin seed
1 tsp. salt
1/2 c. instant rice
Tortilla chips

Brown beef, onion, and garlic in large skillet. Drain. Then add 1 1/2 cup water, tomato sauce and paste, sugar, and spices. Cover and simmer 40 minutes, stirring often. Add rice and remaining 1/2 cup water, cover and cook 10 minutes longer. Serve over tortilla chips. Serves 4.
